
Ingredients
8 (9-inch) whole grain tortillas
1 pound uncooked peeled and deveined medium shrimp, thawed if frozen or Fish of choice
1 (14-oz) bag frozen pepper and onion stir fry, thawed or fresh peppers and onions if you prefer
2 tablespoons of olive oil
1 ½ tablespoon low sodium taco seasoning ( Mrs. Dash or McCormick) or homemade: 1 Tbsp. chili powder, 2 tsp. ground cumin, 1 tsp. garlic powder and ½ tsp kosher salt)
¼ teaspoon black pepper
Instructions
Arrange a rack in middle of the oven and heat to 400 Degrees.
Place a large sheet of aluminum foil and stack tortilla on top and wrap completely. Place tortillas on one corner of sheet pan.
Place the shrimp or fish, vegetables, oil and taco seasoning in large bowl and toss to combine. Spread evenly on baking sheet with tortillas.
Roast, stirring halfway through, 8-10 minutes. To serve, fill the tortillas and enjoy!
